Vanilla Hot Chocolate( Diabetic recipe) ,Pasta Primavera ( Diabetic Recipe)

Hello it has been awhile since I have posted anything, my computer bit the dust and I had to get a new one, so I am trying to learn this one, I like to know something about the computer so if something goes a little hey wired I can at least try and fine what is going on.  We took the dogs to Petco 2 weeks ago the lady Donna who brought Shamus up from Anna , Illinois wanted to see him and see how he was , I think she was shock that he is a big boy, I guess his brothers and sisters are smaller.  He is a happy dog and Scully and him play around a lot, they love going for rides out with us sometimes when we go out they are good in the car or truck.  We celebrated Fathers Day yesterday at my youngest son Brian and daughter-in-law Maria  house, with her parents Rosa & Tony and  her sister Natalie  and nephew Travis, my daughter Carissa and her boyfriend Benny and there friend Jason,my oldest son could not make it, he had to get up early to go to work, we seen Matthew the week before so that was nice, I so enjoy seeing my children it was nice we had Ribs, kabob's, salad, sausage, peppers, mash potatoes, broccoli, another salad and wonderful desserts, one of Brian and Maria friend's came by and also had a good time, we were sitting outside by the fire that Brian built it was nice, of course telling stories and laughing, fun time.,  I got together with some great friends for lunch that I went to grammar school and high school it is nice to see them and laugh, good for the soul to laugh and have good time.  was suppose to go to lunch with friends that I worked with from Johnson & Johnson but could not make it this time so next month I hope I will be able to.  Going to go out to dinner next month with some of the Cog Hill girls I worked with so nice to keep in touch with them. 
We have been getting a lot of rain lately we loss one tree it had to be taken down what a shame it was over 30 tears old and we dug the hole and planted it.  Hard to see something you did get hit by lighting and can not save it.
this was the second time this got hit by lighting the first time we were able to save it, this time they said no.
With all the rain we have been getting I did get some water 2 weeks ago
The retention pond overflowed on to my back acre this was nothing it cover 3/4 of my back acre
Here I walked out and that green box is my transformer for my eclectic it is sitting in water the stakes are for a fence we were talking about getting but who knows.

Here are 2 recipes for you to try and I mean they are yummy and good.
Vanilla Hot Chocolate
Ingredients
 1 cup(s) milk, low fat (1%)
1 cinnamon sticks
2 teaspoon cocoa powder, unsweetened
2 teaspoon sugar
2 teaspoon water
1/4 teaspoon vanilla extract
1/4 teaspoon dark chocolate, 72% cacao, shaved
Preparation

In a small saucepan, heat the milk and cinnamon stick together over medium-low heat until scalding hot (little bubbles are forming around the edge of the pan), about 4 minutes.
While the milk is warming, put the cocoa and sugar in a mug. Add the water to the mug and stir until the mixture has the consistency of a paste.
Remove the cinnamon stick from the milk, add the chocolate mixture and vanilla to the milk, and whisk until slightly frothy. Pour the hot chocolate into the mug, top with chocolate shavings, and enjoy.
Serving size: 1 cup

Pasta Primavera ( Diabetic Recipe)
Serves: 6; Serving size: 1 1/2 cup
Ingredients
8 oz uncooked spaghetti
2 tsp margarine
1 onion, cut into wedges
2 cups broccoli florets
2 small carrot, thinly sliced
1 zucchini, thinly sliced
1 yellow summer squash, diced
3/4 cup low-fat, low-sodium chicken broth
1/3 cup chopped fresh parsley
1/3 cup chopped fresh basil
3 Tbsp lemon juice
1/2 tsp salt
1/4 tsp fresh ground black pepper
3 Tbsp grated Parmesan cheese

Preparation
1.Cook the spaghetti according to the package directions, omitting salt; drain well.
 2.While the pasta is cooking, heat the margarine in a large skillet. Add the onion and saute about 1 minute.
 3.Add the vegetables and chicken broth; stir. Cover and simmer about 6 minutes.
 4.Add the parsley, basil, lemon juice, salt, and pepper. Stir and cook 1 minute more.
 5.Add the spaghetti to the vegetables; toss well.
6.Sprinkle with Parmesan cheese at serving time.

  1. Wow you have had a few difficult days with the loss of the computer and all that rain. Hope things settle for you soon.

    Sorry about the tree - but you had such a lovely time with it - it sheltered you and looked lovely and you have the memories.
