Hello, Today we had a heavier frost on the ground this morning it was 32 here where I live, it is suppose to get into 50's, the sun is out and I think it is nice. With the cooler weather coming our way I start to make more comfort foods. I made this for our dinner tonight and I have to say it is yummy. I am sure others have made this but once in a while I think we need to go back to some of our old recipes and retry them, this is one of them for me. I use to make this when my children were younger, but I would serve it with butter noodles this time I am serving it with Penne noodles.
Creamy Chicken and Mushrooms
2 tablespoons butter ( I used 1/2 stick)
1 1/4 pounds skinless, boneless chicken breast halves ( I used 3 lbs)
4 ounces mushrooms, sliced (about 1 1/2 cups)( I used 1 lb)
1 small onion, cut in half and sliced (about 1/4 cup) ( I used 2 onions)
1/8 teaspoon garlic powder or 1 small clove garlic, minced ( I used large clove)
1 can (10 3/4 ounces) Campbell's® Condensed Cream of Mushroom Soup (Regular or 98% Fat Free)
1/2 cup milk ( I used carnation milk small can)
2 tablespoons dry sherry (I did not use)
1/8 teaspoon ground black pepper ( I ground my own and also used sea salt)
1/2 of a 12-ounce package medium egg noodles (about 4 cups), cooked and drained ( I used Penne Noodles)
Heat 2 tablespoon butter in a 10-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until well browned on both sides. Remove the chicken from the skillet.
Reduce the heat to medium. Heat the remaining butter in the skillet. Add the mushrooms, onion and garlic powder and cook until the vegetables are tender, stirring occasionally.
Stir the soup, milk, sherry, if desired, and black pepper in the skillet and heat to a boil. Return the chicken to the skillet. Reduce the heat to low. Cover and cook for 5 minutes or until the chicken is cooked through. Serve the chicken and sauce with the noodles.

I had lunch with one of the girls I worked with she also retired from where we worked so we went out for lunch it was so nice , of course I picked where my daughter works at, next time we will go to a different place. But while we were out I took some pictures of a few Halloween from the car, and I thought I would share with you.

Tarantula Cookies

2 cups flour
1/2 tsp. Baking powder
1/2 tsp. Salt
1/8 tsp. Baking soda
2 tbsp. Unsweetened cocoa powder
10 tbsp. Unsalted butter, at room temperature
1/2 cup light brown sugar
1/4 cup sugar
1 egg
1 tsp. Pure vanilla extract
1 large bag (16 oz.) pretzel sticks
1 large bag (24 oz.) chocolate chips
2 tbsp. Vegetable oil
Chocolate sprinkles and small, round red candies, for decorating
1/2 tsp. Baking powder
1/2 tsp. Salt
1/8 tsp. Baking soda
2 tbsp. Unsweetened cocoa powder
10 tbsp. Unsalted butter, at room temperature
1/2 cup light brown sugar
1/4 cup sugar
1 egg
1 tsp. Pure vanilla extract
1 large bag (16 oz.) pretzel sticks
1 large bag (24 oz.) chocolate chips
2 tbsp. Vegetable oil
Chocolate sprinkles and small, round red candies, for decorating
Preheat the oven to 350°. In a medium bowl, combine the flour, baking powder, salt, baking soda and cocoa powder. In a large bowl, beat together the butter and 2 sugars until light and fluffy. Beat in the egg and vanilla. Gradually beat in the flour mixture to form a smooth dough.
Roll out a tablespoon-size ball of dough and place it on an ungreased cookie sheet. Press 4 pretzel sticks firmly into each side of the dough ball. Repeat with the remaining dough and pretzels. Bake until the cookies start to brown around the edges, 7 to 10 minutes.
Place a rack over a sheet of wax paper or foil. Using a spatula, carefully transfer the cookies from the cookie sheet to the racks; let cool completely.
In a double boiler or in the microwave, melt the chocolate chips with the oil; stir to combine. Pour the melted chocolate over each cookie to coat. Cover with chocolate sprinkles. Press 2 red candies into each spider for eyes.

The leaves are falling, I already burnt some will have to get them up again maybe over the weekend and then Dennis can burn them for me, but we still have a lot on the trees, my silver maples are turning gold so I know they will start to drop. I am also getting to go out to lunch with some of the ladies I use to work with I am so looking froward to that it should be a good time. Then next month I am getting together with girls I went to school with we have been doing that it is nice to see them and we do have a good time and laugh a lot.
