Fennel and Tomato Soup ( WW+5), Open-Face Chopped Deviled Egg Sandwich (WW+ 3)

Hello, Well I made something new it is a Fennel and Tomato Soup and it is so easy to make and I broke it down for WW+ points which is 5 for 1 2/3 cups there are 6 servings out of this recipe but 5 points that is good with a salad for lunch or dinner, and it is great to freeze also.  Here is the recipe.

Fennel and Tomato Soup

Weight Watchers+ 5 points for 1 2/3 cups, servings is 6

3 Tbs. olive oil
1 large fennel bulb, diced (4 cups) *Note at bottom*
3 vegan Italian sausage sliced into 1/2 inch round (2 cups) * note at bottom*
1 tsp. fennel seeds
2 Tbs. dry vermouth, dry white wine, or water
4 cups low sodium vegetable broth
1 28 oz can crushed tomatoes preferably San Marzano
3 Tbs. chopped fresh parsley
Heat oil in soup pot over medium heat.  Add fennel, and saute 3 to 5 minutes.  Stir in sausage and fennel seeds, and cook 5 to 7 minutes, or until fennel seeds are slightly softened and bits of sausage are stuck  to bottom of pan.  Add vermouth, and cook 5 to 10 seconds to deglaze pan, scraping up and brown bits.  Add broth, tomatoes, and parsley; cover and bring to a boil.  Reduce heat to medium.  Season with salt and pepper; if desired.
Per 1 2/3 cup serving: 136 cal; 6 g prot; 8 g total fat(2 g sat. fat); 19 g carb; o mg chol; 380 mg sod; 5 g fiber; 2 g sugars

*Note*
remember to cut out the center hard part and peel the first part off and you are good to go then to use the rest.
On the sausage I used all 4 it comes 4 to a package so that is what I did.

There is another soup I am going to make but will add that when I make it.

OK made this did change a few things around I will tell you what I did

Open-Face Chopped Deviled Egg Sandwich

Points Plus values per serving: 3

 Chop a large hard-boiled egg; gently mix with
1 teaspoon reduced-calorie mayonnaise, * Note at bottom*
1 teaspoon minced red onion, * Note at bottom*
 1/2 tsp Dijon mustard
 and
 salt and paprika to taste.
Spoon onto 1 slice light whole wheat toast;
sprinkle with chopped chives and paprika.

***Note***
I used  Vegenaise Mayo.  I am getting use to it and I also keep a jar of regular Mayo in the house.  I have to say I am learning to like it.

I did not have red onion in the house so I used spring onion or Scallion some call it.

This has been so good so far as long as I can take recipes I like and also try new ones out and do the points it is good.  Is there anyone else doing the weight watchers + online??? 

So that is what is going on with me so far, I bought a new scale did not want to but since I am not going in to get weight I figured I better so this one talks, tells you your weight  lol so I hope this will do me good.  I really want to get healthy.  Since I have been on this less then a week my sugar is coming down and that is good for me. 

So I am going to close for now and will write in a few days to let you know of a recipe or what is going on.
